Look at the utility "Microsoft Exchange Mailbox Merge Program", EXMERGE.
If you have diskspace over on the mailserver you could run this
application to export the mailboxes to PST files and then do a regular
file backup. The program is fairly easy to set up to run in batch mode.
I have done this on a Exchange 2000 server.

What is your parallelism for these backups set to? Even at 330K/sec, you
should get around 4GB/hour of the backup. We get around 800K/sec doing
bricklevel backups (Exchange 2003, Windows 2003, NW Module 4.1), and
with a parallelization set to 8 we get a pretty decent throughput.

Just for example, I just ran a custom backup with high priority
mailboxes. The backup ran for 22 minutes and backed up 6 mailboxes with
a total of 4,437 MB. This was running during the day with simultaneous
access.
