I think you can run a 7.0 client with a 6.1.3 server after applying a
hotfix. Obviously a 7.0 server is also acceptable.

Absolutely no chance. Neither your server or client are on suitable
versions. You can't backup a bleeding edge operating system using a 3 year
old backup product.
